This tacos de al pastor dish is so important to the work that I do as a chef. I want folks to know that eating plant-based in our Mexican culture means that we’re still going to eat tacos and all the things that we love.

It’s important to me because the more that I see our communities suffering from preventable diseases, I believe we can begin to heal by eating more healthy, more plant-based, while keeping our traditions alive.

Find our al pastor ingredient list below and cook along with chef Jocelyn on Origins: Chef’s Stories as she discusses how the generations before her have inspired Todo Verde’s recipes and how the generations to come motivate her work as a plant-based chef and business-owner.
